These are the first steak knives to be created using Edo hand-forging, or uchihamono. Finished by a swordsmith using the traditional technique of full forging, without molds, that dates back to the Edo period. The handle uses a rare natural wood, and has a surprising lightness in the hand.
The cutting edge is superb, thanks to its traditional manufacture. The tip sinks in easily, allowing pancakes or other soft baked confectionary, fruits and more to be sliced beautifully with just a draw of the blade. In terms of technique, the blade is imbued with its hardness and sharpness through repeated heating and forging by hand. Making the edge angle somewhat obtuse allows for the sharpness to be controlled, ensuring safety.
