“Teuchi Rasha Kiribasami” (handmade woollen cloth-cutting scissors) are created by total fire-polishing a piece of extremely soft iron on steel to produce the grip handle and the blade. Its creation was mastered by his grandfather Choutarou Ishizuka, and passed on to the second son, his father, Shoujirou also regarded as the master; and now his generation is working on “Hizukuri Teuchi Houchou” (fire-polished handmade kitchen knife). The cutting performance of the knife – which lavishly uses steel(a) essential for producing luxury knives – is sharp. It can easily slice through a tomato with its weight alone. “Souhizukuri” (total fire polishing) is a traditional production method of stamping burning iron without the use of a mould, and is the same technique used for producing ancient Japanese swords. The handle for this harshly handmade knife is made from “hotei” (fishing pole) bamboo, which has many joints and is more resistant to decay than wood. The petty knife shares the same handle, but its tip is bracken shaped. The knives, which have been honed over the years, are durable and can withstand several years of use. And a unique lustre appears the more they are used. The kitchen knife not only makes cooking more enjoyable, but the more it is used the more one will become attached to it.
