The shape of the “EDO UCHI” kitchen knife
is sleek and beautiful,
and gives the impression of a well-cutting blade.
They are crafted by Mr. Muneaki Yaegashi,
known to have professionals such as Miyadaiku
(specialized carpenters working on shrines and temples)
fall in love with his skill and come to order tools
tailored to their needs.
Using the now rare traditional crafting technique
“Souhizukuri” (total fire polishing),
without using any moulds,
steel and “Gokunanko” (extremely soft steel)
is combined to form blades.
Looking at the carpenter’s tool chisel,
the contrast between a white shining blade and
an extremely soft steel covered with a black coating is beautiful,
and “EDO UCHI” as well is covered with a beautiful black coating.
Black coating is made in the process of
“Yaki-ire” (a tempering method),though to give
a deep black finishing time and effort was invested.
The thin blade of 1.5 mm is excellent in sharpness.
The width of the blade is as small as 19 mm and
it can therefore also be used as a paring knife.
For the handle two kinds of wood,
ebony or bamboo-leaf oak can be chosen from.
A small case for cork and cleanser is included
for an enjoyable maintenance time.
